Commercial kitchen space meeting Kansas Department of Agriculture sanitation codes is similarly scarce outside the Kansas City and Wichita metro areas. Mobile kitchen units must obtain separate county health permits for each stop, adding administrative steps that reduce contact hours.
The funding supports operations that pre-certify mobile units for multi-county travel and that contract with Kansas State University extension offices for co-located teaching kitchens.
